- You need 1 of rotiserre chicken.
- You need 1/3 cup of oil (approx. or a bit more).
- You need 1 lb of smoked or andioulle sausage.
- It's 1/3 cup of flour (approx or a bit more).
- It's 1 1/2 cup of chopped onion.
- You need 1 cup of chopped celery.
- Prepare 1/2 cup of chopped green onion.
- Prepare 1/2 cup of chopped bell pepper.. i use red.
- You need 2 clove of garlic (presssed).
- Prepare 1 tsp of salt.
- It's 1/2 tsp of black pepper.
- You need 1/2 tsp of cayenne pepper.
- You need 1 1/2 quart of water.
- You need 1 tbsp of chicken seasoning or 2 bullions.
Chicken and Sausage Gumbo EASY step by step
- prep all veggies and pull apart chicken and cut sausage into pieces. put meat and veggies in separate bowls.
- heat up small stock pot with oil. add flour and cook stirring occasionally til rue turns brown.
- add vegetables and cook 5 min or til tender. you can use a variety of vegetables but these are my fave..
- now add the water a little bit at first. then the rest..
- add meat ( side note: if you don't want to skim fat off top later I would cook the sausage down in a skillet for a few minutes and drain the fat. then add to pot).
- add spices and seasonings. these can vary to personal taste. some add cumin.
- bring to boil then simmer hour at least 1 hour. if using raw chicken.. cook alot longer and take our chicken seasoning.
- serve over rice. if out of rice egg noodles!.
